Lean Beef Mince with Herb Tomato Seasoning

Serves: 3–4
Cook time: 15–20 minutes

Ingredients

  • 500 g lean beef mince (5–10% fat)

  • 1 Tbsp tomato paste

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp sweet paprika (or smoked for deeper flavour)

  • ½–1 tsp sea salt, to taste

  • ½ tsp black pepper

  • 1 Tbsp finely chopped fresh parsley or oregano (plus extra to serve)

  • 1–2 tsp olive oil (only if pan is very dry)

  • Optional: 2–3 Tbsp water or stock to loosen

Method

  1. Pre-season: In a small bowl, mix garlic powder, onion powder, paprika, salt and pepper.

  2. Brown: Heat a non-stick pan over medium-high. Add mince and break it up. Cook 4–5 minutes until no longer pink and lightly browned. Drain excess fat if needed.

  3. Tomato boost: Stir in tomato paste and the dry spice mix. Cook 1 minute to toast and coat the mince.

  4. Adjust texture: Add 2–3 Tbsp water/stock if it looks dry. Simmer 2–3 minutes until glossy.

  5. Herbs: Turn off heat, fold through parsley or oregano. Taste and adjust salt/pepper.

  6. Serve: Great with rice, stuffed in wraps, over baked potatoes, or on salad bowls.

Tips

  • Don’t overcrowd the pan browning adds flavour.

  • For meal prep, cool quickly, then refrigerate up to 3 days or freeze up to 2 months.
